In Russian they call them Graniky, in Slovak zemiakove placky.
Ingredients:
Must haves:
potatoes
flour
1 egg
salt
oil for frying
Nice to haves:
onion
dried herbs
Procedure:
Coarsely grate the potatoes and onion if you have it. Press out as much liquid as possible.
Add egg and flour and mix until you get a smooth batter of slightly thicker consistency.
Add salt and spices as last, so that the potatoes don't release more water.
Heat oil in pan and drop approximately two spoons of potato mixture into pan and flatten to form small pancakes.
Fry until golden brown and then flip and fry another couple of minutes until crispy and golden.
Transfer to paper towels to drain excess oil and then cover to keep warm until all pancakes are ready!
If you don't have potatoes you can do it with any veggie that can be grated. We did it with celeriac or zucchini as well.
